If you follow me on Instagram you know that I had too much fun with baking since March. We also went on a two week Southwest states, and national park road trip last month. As much as I tried to make healthy meals for my family, we would always end up with s’mores and ice cream. When we came home from our road trip I told my family that’s time to reset and eat more plant based meals.

Over the weekend I prepped and cooked up healthy dishes. I like simple ingredients that I can find at any store or online. For those of you who want a little inspiration for your own clean eating cooking regimen, below are a few of my favorite meals. Remember clean eating should be easy and fun and not hard or complicated. I like to think of it as mixing and matching clothes. It gets me inspired!

I always start the morning with celery juice.

Instead of grabbing everything bagel I substitute it with avocado, smoked salmon, boiled eggs, and sprinkle it with pumpkin seeds and everything bagel seasoning from Trader Joe’s. Here is an easy recipe to make your own seasoning.

Barley and green lentils with grilled salmon and avocado. So good!

Roasted sweet potatoes with any protein. I used slap steak here.

Back To School Easy Dinner Ideas

Don't know what to cook for dinner during school nights? Here are some ideas and tips to get you started. First, make it simple. My kids don't like many ingredients in their dish so I don't go super fancy on the menu, but love to keep them fresh and mostly organic. Second, save some time by getting pre-made protein such as chicken skewers from Costco. I also like to get meatballs, and chicken hot pie from Whole Foods. Third, presentation. I use bento plates so they can see all the different items on their plate, and it also helps me to get more creative with side options. What are your favorite dishes you made during weeknights? 2017 Oakland Running Festival

I used to run a lot. I mean like a lot.... like six half marathons and a full marathon in one year. I know, not very smart and of course my knee got injured and I had to force myself to rest. That rest took 3 years for me to start running again. My friend posted on Facebook that one of their teammate had dropped out of their team relay. At first, I was very hesitant to say "me!" because I haven't trained for long runs in a long time, but I thought I can totally run the shortest leg right? So I said yes without asking which leg first. Of course when my friend wrote me back to welcome me and yadi... yada... told me that I'll be running the longest leg. I won't lie, I was very nervous because I didn't have much time to train (not to mention kids baseball season take up all my afternoon, then homework, dinner, bed time...) but went for it. I'm so glad I did because my confidence is back and I can't wait for my next race! Thank you lush butterflies!

Best part after the long run ;-)

Joe's Mean Green

No wonder this is my favorite green juice, it contains some of the most nutritious fruits and vegetables. This is a great juice for boosting your immune system and keeping your whole body clean, healthy, and happy. 

Ingredients:
1 Cucumber
4 ribs Celery
2 Green Apples
8 leaves Kale (Tuscan Cabbage)
1/2 Lemon
1 inch Ginger

Directions:
1. Wash all ingredients
2. Peel lemon and ginger
3. Add all ingredients through juicer and enjoy!
