What Are You Reading This Summer?

This summer we don’t have any major trips planned (unlike last year). Instead we are just going to go with spontaneous day trips or staycations in Northern California. One of my goals this summer is to read and finish a couple of books on my list of books to read in 2016. I’m starting with “How Not To Be Wrong – The Power of Mathematical Thinking” by Jordan Ellenberg. This is a book that everyone should read to becoming a better thinker.

BottleRock 2016 - Napa Valley Food, Wine, and Brew Music Festival

Saturday I was invited to my second BottleRock in Napa and had a great time as a VIP. Latitude 38 Entertainment put on another great music festival with performers such as Ziggy Marley, Florence and The Machine, Michael Franti, Red Hot Chili Peppers and more. I was also happy to see so many top restaurants from the Valley providing their best dishes to the crowd but I wanted to try something new so I went with San Francisco-based food truck MeSoHungry. I had their slider and they were delish! My new favorite station was the Nordstrom trend and photo booth where I won a $20 gift card!

Paleo Chocolate Chip Cookies

The easiest and yummiest paleo chocolate chip cookies made with coconut and almond flour. These low carb cookies are chewy and a dream come true. Gluten, grain and dairy free! 

Ingredients:

2 eggs, slightly beaten
2 teaspoon vanilla extract
1/2 cup coconut oil, melted and cooled
1/2 cup coconut sugar
1 cup almond flour
1/2 cup coconut flour
1 teaspoon baking soda
1 cup of dark chocolate chips

Directions:

Preheat oven to 350 degrees. In a large bowl, add in beaten egg, melted and cooled coconut oil, coconut sugar and vanilla extract. Next add in almond flour, coconut flour and baking soda, mixing well to combine and form a dough. Fold in dark chocolate chips. You may need to use your hands to moisten the dough so that it sticks together well. Use a cookie scoop or large tablespoon to drop dough onto ungreased baking sheet. Gently flatten the dough with your hand. Bake for 11-13 minutes, or until edges are slightly golden brown. Allow to cool on cookie sheet for 10 minutes before transferring to a wire rack to finishing cooling. Makes approximately 24 cookies. Enjoy!

Spaghetti Frittata

Here is another super easy dish that I can eat all day. I heat up leftover spaghetti and meatballs and throw in some spinach (so I know it's healthy wink..wink..) season it with sea salt and black pepper. Let it cook for about 5 minutes in medium heat. 

Crack 5 large eggs into a medium bowl, then add 2 tablespoons of any kind of milk. Whisk well then pour the egg mixture into the skillet and cook for 3 minutes or until the bottom of the frittata is set. Place the skillet in the oven at 350F for 10-15 minutes.

Transfer the frittata to a plate, slice, and serve. Enjoy!

 

Meet MomLikeThat - Meagan Kemps

Meet my friend Meagan who is not only an amazing interior designer, but also a loving mom to her boy who adores her to the moon. I first met Meagan last year and immediately was attracted to her effortless chic style. I hope you’ll enjoy reading about her just as much as I enjoying having her as a friend. Thank you Meagan for taking the time to share your beauty tips and motherhood with us.

How would you describe yourself? In 3 words.

Friendly, easy going, trusting.

What do you do besides motherhood?

Interior design! I’ve been a designer for almost 25 years, I still love learning new things from colleagues or clients and finding new inspiration.

What’s the best advice you have ever received?

Just out of college an employer told me “we are all born with different gifts, celebrate and build on the ones you have.” I had always tried to fit the mold of what I thought I was supposed to be good at, (and a very poor fit it was!) when I finally acknowledged my gifts I was able to see them as something of value. I try to remember that while raising my son; we are not all meant to excel in the same way, some of us are meant to be designers or artists, and others to be physicians or financiers. We all contribute to a healthy society in our unique way.

What’s your beauty routine?

I like to think I’m low maintenance, but that may not be 100% true, I’ve always loved beauty products and pre-motherhood I could spend hours in a Sephora! Nowadays, I keep things pretty simple, I love Revive skin care products and my clarisonic which I use every day. For makeup I like Armani luminous silk foundation, Guerlain Les Meteorites powder, Dior Nude bronzer, and Blinc mascara, it’s the only one that doesn’t flake off on me. I’m addicted to pale nude/clear lipgloss, I try to branch out into bolder lip color occasionally but always go back to my old standby.

What’s your signature scent?

Bond, the scent of peace. I love the fragrance & the cool purple bottle. I keep a bottle of YSL Paris, I don’t wear it but I like to smell it - it transports me back to the 80’s.

What can’t you live without?

Of course my entire family – other than that my wonderful friends, my pets, my ipad for reading books, and tons of coffee.

How do you balance your life?

I have a few ways I try to keep balance: I try to take time for myself or with friends at least a few times a month. My monthly book club is one way I stay connected to my friends when the days get away from me – I’m so thankful for that group! My strategy for getting exercise in is to put on my workout clothes as soon as I get up. I don’t look pulled together for school drop off but I manage to get a walk or something in before I get dressed for the day. The last way I try to create balance between work & family life is to limit work calls & email to between 9 and 3 every weekday. Sometimes it’s not do-able, but it’s something I try to keep in check so I don’t let work stress seep into family time.

Who is your biggest role model?

I don’t think I’ve ever had a singular role model, though I’m constantly amazed by all the successful, accomplished & well rounded women I know – they inspire me to stretch myself to see what I can achieve. My friend and design colleague Tarni is my style guru – when I’m pretty sure I’m dressed like a dweeb I think “would Tarni be caught dead in this?” and then I know I need to change.

Do you have a family tradition?

For thanksgiving we make a gratitude tree, we collect leaves & write who or what we’re grateful for. We also eat dinner together almost every night & chat about what happened that day, in between reminding our son to sit down, eat, and use his manners - it’s a balance!

What makes a mom like that?

Every mom that’s making an effort to be the best she can be for herself and her family is a mom like that!

Favorite restaurant: In Napa I love Morimoto.

Favorite recipe: My step dad’s paella.

Favorite dessert: Peanut butter and chocolate ice cream, but I love all dessert.

Favorite drink: Tito’s with lime and Pellegrino.

Favorite book: Too many to choose just one! I recently read the Signature of all Things and loved it. I also just finished Loving Learning (from a  MomLikeThat blog suggestion!) and I'm very inspired by the ideals of progressive education.

Downtown Napa has changed so much in the last few years, and it's not all about wine and food, we are also getting more retail and speciality stores. If you plan to visit, you must stop and shop at Boho Lifestyle. Whether you are looking for an outfit to wear for a date night or a chic, casual stripe top to add to your wardrobe, your can find it here. I love that they support local designers and most of their products are locally made and are reasonably priced. The Perfect Off-The-Shoulder Dress

When it comes to trends, I don’t typically race out to buy the latest craze. I want to make sure it works on my body and frame. I had a hard time finding the perfect off-the-shoulder piece until I spotted this dress by Mossimo for Target. Love how it flows easily and the pretty peek-a-boo insets on the front and hem, and the bell sleeves add sassy charm and plays perfectly with the elastic off-the-shoulder neckline. You can dress it down with a pair of sandals or wear it out with heels. Also how cute is my bracelet from Olive and Poppy made out of recycle wine barrels?
